Father's Day Strawberry Banana Pie Love

So I mentioned earlier that I made Jordo a pie for father's day. Didn't I? I think I did anyways. The point is here I am to share the recipe.

We have a new tradition, started last year, that on Father's day and any other "Jordo-celebration" day that it is requested, Dad gets a pie of his choice. He can choose any pie, one that we have made before, a newly found recipe, or even sometimes it is just a description of something he longs for that I go chasing after to create.

This year it was Strawberry Banana Cream Pie. Yum.

I don't usually love strawberry-banana combos, but who wouldn't love that in a cream pie with just delicious fresh fruit yumminess?

Alright, on to the makings of the pie!



Strawberry Banana Cream Pie

Crust - I used good ol' Western Family frozen premade crust (I mean come on guys, I am uber preggo and uber uncomfortable, even on my fancy new kitchen stool, like I was going to make the filling AND the crust from scratch!?)
Fresh Cut Strawberries
Fresh Cut Bananas

Vanilla Custard Pie Filling (RECIPE HERE)
Fresh Whipped Whipping Cream (with a touch of sugar and vanilla of course!)

Directions:
Layer like a mad woman. :) That's all! Obviously the major recipe step here is the custard cream filling layer. You could go easy-peasy and do some sort of jell-o pudding something but it wouldn't be nearly as delicious! The custard was a bit tricky to get just right, like she said, with the thickening and such. But it turned out great!

Oh, and positive note... also just like she said you can make this custard a bit in advance before you layer it all together. I actually made it on Friday but then ran out of time to put the pie together. I put it together Saturday morning and it worked great!

Like my egg yolks? Yeah, I thought so, very flower-power-esque.


The end result was delicious. Because you use fresh bananas you really need to make this pie the day of your event, and then it's only good for another day or two. We made it to day three with no problems and then it was gone. So who knows if it would be good past that? Not that you would ever know since it was so delicious I doubt this pie has ever seen a day 4 in its recipe lifetime!?


We also have another fabulous tradition starting, which I think everyone should do... we don't just celebrate Father's Day. We celebrate Father's Week. It was awesome. A new card from M on each day with some sort of treat. The final gift was this cute apron with M's handprint. I think in a year or two we'll add baby #2's handprint, that's why I put the year next to her hand.


(Oh, Jordo also got water guns for his birthday... and can I just say that water guns for the whole family is the coolest gift ever! We have been loving them, even M!)

Basically we had a fabulous Father's week. Good times. :)
